
Spiked Eggnog Pancakes - RECIPE

I've always been one to welcome the change of seasons. While there are many reasons to embrace a new season, such as an excuse to change up your wardrobe or the celebration of a special event or holiday, the opportunity to enjoy seasonal flavors is one of my favorite reasons! I'm often inspired to incorporate seasonal flavors into the dishes and cocktails we offer guests each day, and the Christmas holiday season is no exception. Gingerbread, cranberry, orange, and eggnog are quintessential 'holidays' if you ask me! Since the cold weather rolled in with December, I've really enjoyed eggnog, spiked of course! A good ole 'Kentucky Hug' creates that warm & fuzzy feeling on even the coldest nights.
This recipe for Spiked Eggnog Pancakes has been gracing the breakfast table these days as one of our third-course offerings. I’ll brag just a bit and say that it’s downright AMAZING. It’s my standard pancake recipe, swapping out milk for eggnog – that’s it. The pancake batter is thicker than normal, so it’s best made as small silver dollars, but boy will they RISE!
Spiked Eggnog Pancakes
Makes 15 silver dollar pancakes
Ingredients:
- 3 tablespoons butter, melted
- 1 egg
- 1¼ cup eggnog
- 1 teaspoon vanilla
- 1½ cups all-purpose flour
- 3½ teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon sugar
Directions: Melt butter in microwave (30sec) in your mixing bowl. Whisk in egg until combined, then whisk in the eggnog. In a separate bowl, whisk together the remaining dry ingredients. Whisk the dry ingredients into the wet until just combined (don’t over-mix). Allow to sit for 15-20 minutes before cooking, which will allow the batter to aerate and will make the pancakes so very fluffy! Scoop batter onto a hot griddle, flipping once when bottoms are browned. Top with Chateau Bourbon’s FAMOUS Buttered Bourbon Maple Syrup.
Buttered Bourbon Maple Syrup: 2 parts maple syrup, 1 part bourbon. Add 1 Tbsp butter per 4oz syrup mixture. Microwave for 30 seconds, then whisk together to incorporate melted butter. Serve immediately.
